Pecorino Romano is a medium-fat hard cheese and is produced exclusively in Italy. The name "pecorino" derives from Pecora, which means sheep in Italian. Pecorino cheese is often used instead of Parmesan cheese. It is slightly stronger and saltier in taste, hence one tends to use less Pecorino than Parmesan on pasta dishes.
Pecorino Romano is the most popular amongst six varieties of Pecorino and was a staple in the diet for the legionaries of ancient Rome. Today, it is still made according to the original recipe and is one of Italy's oldest cheeses. On the first of May, Roman families traditionally eat Pecorino with fresh fava beans during a picnic in the Roman Campagna".
